COGNAC – from vineyard to barrel

The Vineyard

The vineyard is located in Grande Champagne, a district that is the land of the finest Cognacs. Today, Pierre’s family is one of the few Cognac houses that are specialised in old Cognacs. The 75 acres vineyards are planted with Ugni-blanc. It is the traditional variety of grapes in Cognacs delimited area. Grapes are vinified into a light, fruity wine which is distilled on fine lees.


Pierre uses two stills of 18 and 25 hectolitres, the ideal size for the best eaux-de-vie. Wine is distilled twice in a copper Charentais alembic. After the first distillation, the wine becomes the “brouillis”. The “brouillis” is then distilled : head and tail (beginning and ending) are separated from the heart, the only part that will age in barrels.


Pierre de Segonzac’s Cognacs are aged in oak barrels from Limousin. Young “eaux-devie” are first stored in new barrels for one year, then moved to older casks. Each year, there is as much as 3% of Cognac production that evaporates. This evaporation is known as the Angels’  share. Pierre’s youngest blend ages at least ten years in casks before being sold.

The Blending

Cognac is the result of the blender’s art. Pierre has acquired skills in the art of blending ever since he was a child. He says : “Cognacs varies from casks to casks according to age, storage conditions and countless other factors”. The genius and skill of Pierre de Segonzac lies in the artful way he combines the various Grande Champagne eaux-de-vie so as to make the most subtle and harmonious blend.
